Snoek with Sweet Potato Cake

Recipe Details

Sweet Potato Cake:

  • 2 cups sweet potatoes mashed
  • Half cup of cake flour
  • Half cup of sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Half a cup of Milk

Preparation: Peel then cook the sweet potatoes. Then mash the sweet potatoes. Mix sweet potato mash with cake flour, sugar, eggs, baking powder, cinnamon and milk. Mold medium-sized flat balls of the sweet potato mix, and put into a hot greased/oiled pan. Let it cook for about 3 minutes, then turn and cook for another 3 minutes. Optional: Drizzle Marula syrup over the sweet potato cake

Basting Sauce For Fish:

  • 1 tsp chilli flakes
  • 125 butter
  • 125 ml apricot jam
  • Fresh garlic
  • 1 tsp Soy sauce

Preparation: Add all ingredients together in a pot. Then put the pot over heat (fire or stove). Stir ingredients as they melt together.

Preparation: Drizzle Olive oil on both sides Pour Basting sauce to cover the fish on one side then fry for a few minutes. Turn the snoek around, pour basting sauce over to cover the fish and continue to fry until golden brown.

Serve together with sweet potato cake and an optional salad of your choice for garnish.
